Edmonton cake business fined £10,698 for hygiene breaches
Enfield Council prosecution reveals mouse droppings, poor maintenance, and structural damage at Sugarbake (London) Limited.
Incident → evidence → outcomeAn Edmonton cake manufacturing business and its manager have been fined more than £10,000 for breaching food hygiene laws. Sugarbake (London) Limited, based in Nobel Road, pleaded guilty to six offences after Enfield Council environmental health officers discovered serious failings during an inspection last September. The company supplies a wide range of cakes, tarts, muffins, biscuits, and fresh cream cakes to businesses locally and nationally.
Appalling Conditions Found
Council officers found the company had breached regulations regarding premises cleanliness, pest control, maintenance, and utensil hygiene. Food chillers were in poor repair, sink taps were dirty and rusty, and food spillages were present on floors. Mould, damp, and condensation were noted on ceilings, alongside structural damage to the building. Mouse droppings were discovered throughout the premises, including the food production and storage areas, and the staff kitchen. These droppings were found on shelving and the floor, presenting a contamination risk. Open bags of food and ingredients were stored in dirty containers.
The offences committed by Sugarbake contravened the Food Safety and Hygiene (England) Regulations 2013. Due to the severity of the findings, Enfield Council initiated legal proceedings.

At Highbury Corner Magistrates Court, Sugarbake (London) Limited pleaded guilty to the charges. The business was fined £4,000, with a victim surcharge of £300 and ordered to pay council prosecution costs of £2,674.48. Manager Ismail Colak also pleaded guilty and was fined £750, with a victim surcharge of £300 and ordered to pay costs of £2,674.48. The total fines and cost orders amounted to £10,698.96.
Elisa Morreale, Enfield Council's cabinet member for licensing, stated that maintaining hygiene practices in food preparation premises is mandatory.
